For Chef Robert Cordonier of Hillside Winery and Bistro in Penticton, B.C., good food is never an accident, and it never stands alone. Robert’s mission is to produce unique flavour combinations in his seasonal menus that complement the wines that are deliciously created from Hillside Winery and Bistro – an Ocean Wise partner located in the Naramata Bench, one of the premier grape growing regions of Canada.
To achieve these flavours, Robert locally sources his food ingredients from the rich soil of the Bench. The freshness of the food is paramount, and to achieve his high standard for excellence, he obtains his ingredients on a hyper-local scale – not only minimizing the establishment’s carbon footprint, but also maximizing the flavour and quality of his culinary building blocks.
All of this goes into food that is perfectly paired with the winery’s premier wines, produced from local, delicious, seasonal grapes from the Bench.
Robert’s passion for excellence and creativity is one of the many reasons why we’re so fortunate to have Hillside Winery and Bistro participate in this season’s spring release wine event of the year – Wine for Waves on April 26. Presented by Vancouver Aquarium and Naramata Bench Wineries Association, Wine for Waves will offer guests the first taste of the Bench’s spring release wines, as well as Ocean Wise culinary offerings from winery restaurants such as Hillside Winery and Bistro, and silent auction opportunities featuring exclusive prize packages and wines.

An interesting side note on Chef Robert’s culinary career – highlights include cooking for celebrities such as Sylvester Stallone, Uma Thurman, Gary Sinise and the Vancouver Canucks. After rising to the position of restaurant chef at the Fairmont Waterfront Hotel in Vancouver, his interest in B.C. wine drew him to the Okanagan. In 2010, Robert joined the Hillside team and is enthusiastically pairing Hillside Estate wines with the bounty of the Okanagan fields in his award-winning bistro.
