This month, Vancouver Aquarium’s Ocean Wise® partner Sabor is celebrating sustainable seafood with their fourth annual Seafood Festival held in Edmonton, Alberta.
Chef Lino has always prioritized his relationship with fishermen, and the ability to select his seafood with care. Chef Lino left his restaurant on the coast of Portugal and opened Sabor Restaurant in Edmonton with Chris Mena. They became Ocean Wise partners in order to gain a better understanding of the seafood they were sourcing. Ocean Wise helps chefs make sustainable seafood decisions based on criteria such as how the seafood is caught and where it is caught. Despite being far from the ocean and its fishermen, with the help of Ocean Wise, Lino has built quite the impressive sustainable seafood menu in the land-locked city of Edmonton.
Sabor’s annual Seafood Festival is a celebration of Ocean Wise seafood infused with flavours of Portugal. On this year’s menu are delectable dishes such as grilled octopus in black olive tapenade, roasted Portuguese-style sablefish, grilled Humboldt squid in spicy tomato sauce, and bacon-wrapped sturgeon to name a few.
Chef Jan Hansen of Hotel Arts in Calgary even contributed a collaborative dish to the annual Seafood Feast’s menu: lingcod fritters with spicy piri piri aioli. All proceeds from the sablefish and lingcod dishes sold during the Seafood Festival will be donated to Ocean Wise.
