The fascinating country of Peru is known for the treasures of the Inca Empire, including one of the seven modern wonders of the world, Machu Picchu.

Pachamama, which translates to Earth (Pacha) Mother (mama), is a goddess of Inca mythology in the native “Quechua and Aymara” language. She inspired harmony between the culture of ancient peoples and the nature that surrounded them. The Incas were at the mercy of Pachamama, its mountains, waters and valleys, and from there was born their deep respect for nature and all its elements. In Peru, the culture continues to be rich in spiritual traditions and the respect for Pachamama persists today.

Having been a global fishing power, fisheries represent a major element of the identity of Peruvians like Patricia Canales, founder of Le Soleil du Sud. When she arrived in Montreal, Patricia’s main goal was to bring exotic fish and seafood to Canada. Always inspired by Pachamama and her Peruvian roots, her goal was to offer products that stood out for their taste, freshness and superior quality.

After joining the Ocean Wise Seafood program in Québec, Patricia prioritized the constant improvement of her products. Her next challenge was reducing the ecological footprint of packaging at Le Soleil du Sud by developing biodegradable packaging with a team of international experts. In 2019, she introduced sustainable packaging that fully degrades in four years to help consumers make informed and responsible choices in their everyday purchases.

Le Soleil du Sud scallops are raised in suspended lanterns that float below the surface of the seawater. These recipes take us out of our comfort zone in the kitchen and allow us to live surprising and delicious food experiences. Soleil du Sud Scallop ceviche with pistachios

Serving for 2 people per bag of 340g

Ingredients:

  • 1/4 red onion
  • Handful of pistachios
  • Handful of walnuts
  • 1 tbsp fresh coriander
  • Juice of 1/2 lime
  • Salt & pepper
  • 1 bag of Peruvian Scallops The Southern Sun
  • 2 small red Jalapeño

Steps:

  1. Soak the sliced red onion in warm water for at least 5 minutes
  2. Chop the walnuts and pistachios
  3. Cut the Jalapeños into small pieces and exclude the seeds
  4. Chop the fresh coriander
  5. Rinse the scallops in cold water and dry them with a cloth
  6. In a plate or bowl, assemble all the ingredients – scallops, red onion, walnuts, pistachios, jalapeños and coriander
  7. Finally, squeeze the file (but not too much!)
  8. Mix everything together
  9. Salt and pepper to taste
